Winner of the 2003 Tiki Central Drink Contest and further honoured with a place in Jeff berry's Beachbum Berry Remixed, there's no mistaking the quality of this contemporary Tiki cocktail. 4 shots of Grapefruit gives this drink a big and bold fruit flavour with a hint of almond on the finish.

Quick Guide

Mix

1 shot of Dark Rum
1 shot of Light Rum
4 shots of Grapefruit Juice
1.5 shots of Passion Fruit Syrup
0.75 shots of Lime Juice
0.25 shots of Almond Sugar Syrup

Shake

Add all the ingredients to the mixing tin, add lots of ice, shake thoroughly and strain into the glass over lots of crushed ice and churn.

Pour

Serve in a Collins glass and garnish with a mint sprig.

Measure 1 shot of Dark Rum and add to the mixing tin.

Measure 1 shot of Light Rum and add to the mixing tin.

Measure 4 shots of Grapefruit Juice and add to the mixing tin.

Measure 1.5 shots of Passion Fruit Syrup and add to the mixing tin.

Measure 0.75 shots of Lime Juice and add to the mixing tin.

Measure 0.25 shots of Almond Sugar Syrup and add to the mixing tin.

Add lots of ice to the mixing tin.

Shake the drink well until condensation forms on the outside of the mixing tin.

Strain the contents of the mixing tin into a Collins glass.

Fill up the glass with crushed ice.

Churn the contents of the glass.

Taste the cocktail and if necessary adjust the balance with a touch of extra sugar or citrus juice.

Garnish the cocktail with a mint sprig.
