A fruity version of the classic Tom Collins. The dry base of Lemon and Gin works perfectly with the Raspberries to produce an excellent summer Cooler.
2 shots of Gin
1 shot of Lemon Juice
0.5 shots of Sugar Syrup
12 Raspberries
Top up with Soda Water
Gently muddle the Raspberries with the Gin in the mixing tin, add the Lemon and Sugar and lots of ice, shake, fine strain over ice and top up with Soda.
Serve in a Collins glass and garnish with 3 raspberries.

Many Raspberry Collins recipes include a touch of creme de framboise or black raspberry liqueur. A collins should be dry and subtle but if an extra blast of raspberry flavour is needed, add no more than a quarter shot of the liqueur and a drop of extra lemon juice to balance the sweetness.
Add 12 Raspberries to the mixing tin.
Gently muddle the contents of the mixing tin
Measure 1 shot of Lemon Juice and add to the mixing tin.
Measure 0.5 shots of Sugar Syrup and add to the mixing tin.
Add lots of ice to the mixing tin.
Shake the drink well until condensation forms on the outside of the mixing tin.
Fill a Collins glass with ice.
Fine strain the contents of the mixing tin into the glass.
Top up the glass with Soda Water.
Gently stir.
Taste the cocktail and if necessary adjust the balance with a touch of extra sugar or citrus juice.
Garnish the cocktail with 3 raspberries.
