Simplicity is everything in this delicately balanced classic Champagne cocktail. And balance is indeed essential! The liqueur should not be overdone. As Kingwell says in Cocktail Culture: "You want to taste the Champagne as it acquires new texture, not witness its murder by blackcurrants."
A reddish shadow cast by a Kir Royale cocktail.
Made originally and authentically with Creme de Cassis, a Kir Royale works just as well with other dark berry liqueurs, particularly Black Raspberry.
A hint of flavour from a touch of spirit or liqueur works well as an alternative to the classic Kir Royale. Sloe Gin is an excellent place to start.
Fill a Flute with ice and water to chill it for a moment, before discarding. Build the cocktail in the chilled glass.
Measure 0.5 shots of Black Raspberry Liqueur and add to the glass.
Gently stir.
Taste the cocktail and if necessary adjust the balance with a touch of extra sugar or citrus juice.
