A magical combination of pretty standard ingredients creates an electrifying and contemporary mule. Dale Degroff created this cocktail as a tribute to the great bartenders of Cuba. As Dale puts it in The Craft of the Cocktail "curacao, lime and rum are the holy trinity of the island rum drink" and this cocktail combines them in perfect harmony. Top up this drink with Ginger Beer with restraint. 2 shots is all that's required, any more will over dilute the other ingredients.
1 shot of Light Rum
0.5 shots of Dark Rum
0.5 shots of Triple Sec
0.25 shots of Lime Juice
2 dashes of Old Fashioned Bitters
Top up with Ginger Beer
Add the first three ingredients to the mixing tin with lots of ice, shake thoroughly, strain over lots of ice and top up with Ginger Beer.
Serve in a Collins glass and garnish with a lime wheel.
A slice of Lime completes Dale Degroff's Anejo Highball cocktail.
Measure 0.5 shots of Triple Sec and add to the mixing tin.
Measure 0.25 shots of Lime Juice and add to the mixing tin.
Add 2 dashes of Old Fashioned Bitters to the mixing tin.
Add lots of ice to the mixing tin.
Shake the drink well until condensation forms on the outside of the mixing tin.
Strain the contents of the mixing tin into the glass.
Top up the glass with Ginger Beer.
Gently stir.
Taste the cocktail and if necessary adjust the balance with a touch of extra sugar or citrus juice.
Garnish the cocktail with a lime wheel.
